A perfect day

Today was my own personal Mother's Day. We celebrated a week after the rest of the US because last Sunday my daughter wasn't home from college yet, This worked well for all concerned as it freed my son to spend last Sunday with his fiancée and her mother. Also, we could plan dinner out today and know the place would not be packed.

But to start with, we had stuffed French toast for brunch. My husband makes it once a year for me, and it is great! Plus my son and his lovely fiancée brought orange juice and champagne, and we made mimosas. We got out the old video of my son's first and second birthdays; watching them was a hoot and a half. And then the mimosas hit and I took a nap.

When I woke up, I wrote for a while (a novel rewrite that's taking a while but seems to finally be shaping up) and then I took the dog for a walk in the park. We went for dinner to one our favorite places, the perfect ending to a truly wonderful day.

Sounds like you had a great day, Karen. Happy Mother's Day.

(Does your husband use cream cheese in the stuffed french toast?)

The filling is cream cheese mixed with powdered sugar, cinnamon, and chopped pecans. He cuts Italian or challah bread into thick slices and cuts a pocket into each slice to stuff it, Then he dips each slice in a mixture of cream, beaten eggs, and nutmeg and cooks it in butter, Top with raspberry sauce and yum!

When you celebrate doesn't matter; just that your family shows you how much they care. Happy (very belated) Mother's Day!
